Hi Katie, Great question! And I've got a number of options for you. The first is in this blog post here where you'll see my interest in crispbreads: Do you need a new gluten-free lunch? The second is in this post where I discuss wraps: A super easy gluten-free wrap lunch (lifeonaricecake.com) The third is in an Instagram post where I've showcased a number of different lunches I love, some of which you can make at home and take with you: https://www.instagram.com/p/COiHKvgJYpn/ 1. Poke bowl: fresh salmon (sushi grade), avocado, carrot, pear, pepper & fresh greens. Drizzle over olive oil - yum! 2. Toastie. Fill Genius triple-seeded bread with chicken slices & pour over beaten egg. Pan fry & add veg. Delish! 3. Quick-fried tortilla. Heat a frying pan & add beaten egg & a slice of ham*. Pop a g-f wrap on top. Fry for 3 mins, flip and fry again. Serve with spinach and sweetcorn. 4.. Take a g-f tortilla, add green leaf salad & roasted squash. In a separate bowl mix plain yogurt with roast chicken and a teaspoon of curry powder. Add to the tortilla and roll up to devour! 5. Good old chicken soup! I love Covent Garden (they're the best bought soup I've found) & I added sweetcorn & spinach to mine here. I served it with a homemade seeded bread made from Doves Farm g-f bread flour.
Then there are gluten-free pot noodles you can buy and add hot water. https://www.instagram.com/p/CROrC6rrZmK/ I really hope that gives you some inspiration!
